Our Asian Duck Sliders

We were incredibly excited when we found out that Maple Leaf Farms would be joining us for our tailgate.

Duck isn't something you would typically think of as a a game day meat. That is, until we found out they offer ground duck and duck bacon.

Simply, wow!

The ground duck has a flavor and texture similar to pork sausage, and is incredibly flavorful without any seasoning what-so-ever. But, we decided to head in an Asian direction with some ginger and the warm spices for Chinese Five Spice powder.

A fresh cabbage slaw adds some veggie brightness to the flavors of the slider, creating a combo that was a quick hit with everyone who tasted them.

Ingredients

Honey Ginger Slaw

  • 2 c red cabbage, shredded
  • 1 carrot, julienned
  • 1 sweet onion, sliced
  • ½ c crushed pineapples with juice
  • 2 teaspoon soy sauce
  • 2 teaspoon white vinegar
  • 2 teaspoon honey
  • 1 teaspoon ground ginger

Duck Sliders

  • 1 lb ground duck
  • 2 ½ teaspoon Chinese five spice powder
  • ½ teaspoon ground ginger
  • ¼ teaspoon garlic powder
  • teaspoon red pepper flakes
  • 8 slider buns (We used French bread rolls.)

Instructions

Honey Ginger Slaw

  • Place the cabbage, carrots, onions and pineapple in a large bowl.
  • In a small bowl, whisk together soy sauce, vinegar, honey and ginger until combined. Pour sauce over veggies, and stir until coated.
  • Set aside. (This can be made ahead of time and refrigerated for up to 24 hours.

Duck Sliders

  • In a medium bowl, mix together ground duck, Five Spice powder, ginger, garlic and red pepper flakes.
  • Heat a large skillet over medium-high heat. Form 2 tablespoon of the duck mixture into a patty, roughly 2½ - 3 inches in diameter. Place patties onto the hot skillet and cook for 2 minutes on each side, until the color of the meat has changed and the patty is firm. Remove from heat and continue with the remaining duck mixture.
  • To form the sliders, place one patty in each bun and top with the Honey Ginger Slaw.

  2. Love that you made sliders with the duck. Also, that slaw recipe sounds fantastic! It might even get my non-slaw lovers to gobble it up with the use of pineapple juice.
