Tap... tap.... tap... on the keyboard, followed by that loud, CRUNCH. Your ears prick up, and you just want to know. "What ARE they munching on?"
And maybe, you start craving your own crunch.
I couldn't tell you what it is, but crunching and munching is contagious. And, we all know you've got your favorite crunch.
Is is a big juicy apple or cute sweet baby carrots? Maybe. Or maybe, we just make ourselves believe those are our favorites. Maybe they really are. (I do love a nice crisp apple.) But, sometimes, that crunch can only be satisfied by something a little more crisp and indulgent.
But, indulging that crunch craving doesn't have to lead to hitting the vending machine for a bag of chips.
Our Crispy Broccoli Cheddar Bites
These little broccoli cheddar bites are perfect for a game day appetizer or even a fun, kid-friendly side dish.
Fresh broccoli is coated in a light egg batter and rolled in breadcrumbs and cheddar cheese. Then, the bites are baked to crispy, roasted perfection.
The crisp and cheesy coating gives the already crunchy-crisp broccoli a wonderfully cheesy crackle.
Who doesn't love broccoli and cheese?

Crispy Broccoli Cheddar Bites
Ingredients
- 1 head broccoli (roughly 4 c, chopped)
- 2 eggs
- 1 tablespoon milk
- 1 c bread crumbs
- ¼ c sharp cheddar cheese, shredded
- 1 ½ teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon salt
Instructions
- Preheat oven to 400F
- Chop broccoli into 1-2 inch, bite sized pieces, using mostly the florets.
- In a medium bowl, beat eggs with milk. Place chopped broccoli in bowl and toss to coat broccoli in egg mixture.
- In a different bowl mix together bread crumbs, cheese, and spices.
- Dip egg-coated broccoli in the bread crumb mixture, pressing firmly to get the coating to stick to the broccoli.
- Place coated broccoli on a greased baking sheet. Repeat with remaining broccoli.
- Bake broccoli for 15-20 min, or until crisp.
- Remove from oven and let cool slightly before eating.
