Our Recipe for Fluffy Dinner Rolls
No matter how grand the dinner, how vast the party spread, or even how simple the rushed bite is, there is nothing quite like fresh, fluffy rolls.
And, nothing beats the smell of fresh bread baking in the oven.
Something about it just says comfort and home.
This is our recipe for that classic fluffy dinner roll. They flake like they should. Butter melts on them like it should. And the texture is every bit as light and fluffy as you crave when you just want to sink your teeth into a warm and comforting dinner roll.
Bread Machine Dinner Rolls
Kneading bread by hand can be an incredibly therapeutic break from the day’s business, particularly during the busy Holiday season. But, sometimes we just don’t feel like we have the time to work the dough by hand.
That’s when a stand mixer can come in handy to cut down the kneading time. You can toss your dough into the mixer and let it do its thing while you do yours.
Or, better yet, we’ll break out the bread machine. It’s the ultimate gift when you want fresh bread, but don’t have the time to think about it. Just toss the ingredients in, set it to the DOUGH setting, and let it do its thing.
The good thing is, that these rolls come out perfectly, no matter your mixing preference. So, there’s no excuse not to have fresh, homemade fluffy dinner rolls gracing your dinner table!

Fluffy White Dinner Rolls
Ingredients
- ½ c water, warmed to 100F
- 2 Tbsp sugar
- 2 ¼ tsp active dry yeast (1 packet)
- 1 c milk, warmed to 100F
- 2 Tbsp unsalted butter, softened
- 4 c unbleached all-purpose flour
- 1 1/2 tsp salt
Instructions
For the Bread Machine
- Layer the dough ingredients in your bread machine bowl according to the manufacturer’s instructions. Process on the dough setting.
- Check the dough a couple of minutes into the first knead to be sure a soft dough is forming. Add more flour or water, one Tbsp at a time, if the dough looks too sticky or dry.
By Hand (or Stand Mixer)
- In a large bowl, dissolve sugar and yeast in warm water, allow to set for 5 minutes until foamy.
- Add milk and butter. Mix to combine.
- Add flour and salt, mixing well until the dough comes together. When the dough is too stiff to stir, turn onto a lightly floured counter-top and knead by hand for 7-10 minutes, until a soft, pliable dough forms, add more flour or water, one Tbsp at a time if the dough looks too sticky or to dry. (Alternately, use your stand mixer to blend the ingredients together, and knead using a dough hook for 3-4 minutes, until the dough is smooth.)
- Place the dough in a well-greased bowl. Cover it with a damp towel and let rise until doubled in bulk, roughly 1 hour.
Finishing It Up
- Take the dough out of the bread machine or the rising bowl, and knead it a few times by hand to deflate.
- Divide dough into 12 equal pieces. Roll each piece into a ball and place into a greased, 9×13 pan. Brush rolls lightly with milk. Cover and let rise 30-45 minutes, until doubled.
- Near the end of the rising time, preheat the oven to 375F.
- Bake rolls for 15-20 minutes, until golden brown.
- Cool in the pan slightly before removing and serving.

Hi there,
How long do you leave your bread-machine to do it's thing on the raw ingredients? My dough setting is only 1½ hours. I see some bread-machine dough settings are a lot longer. thank you!

Hi Suzie. I think mine runs around 1 1/2 - 2 hours as well. As long as the dough is mixed and has some time to proof and get puffy, you should be good. If the dough setting finishes up and you find that the dough doesn't seem risen and puffy, you can always just leave it in the bread machine to rise a bit more before shaping.

This recipe is super easy and exactly what I was looking for! I really wanted something light and fluffy and these fit the bill. These will be served on our Thanksgiving table by turning it into a brown and serve method. Thank you for sharing. I would love to know about what size you roll them into before the second rise?

Hi Hope! Unfortunately, I don't have notes on what weight or exact size we cut these rolls to. I just divided the dough roughly in quarters, then each piece into three to get 12 rolls total. We hope you enjoy the rolls!
