Something about the warming sensation of ginger, paired with the deep, almost bitter, sweetness of molasses just brings you into that warm and toasty feeling of the Christmas season.

How Do You Like Your Gingerbread Cookies?

There are so many varieties of ginger cookies. (Like the German pfeffernusse.) And, it seems that everyone has their own idea of what "The Perfect" ginger cookie should be like.

Some like them crisp and snap-ish. Some like them soft and pillowy.

We like ours somewhere in the middle.

Our Chewy Ginger Cookie Recipe

These ginger cookies are nice and chewy, but they have just a slight amount of crispness around the edges.

That way you get that initial, satisfying crunch, but, as you continue, you dive into chewy ginger cookie goodness that you can get lost in.

Ingredients

  • 1 ¼ c unbleached all-purpose flour
  • 1 c whole wheat flour
  • 1 ½ teaspoon baking soda
  • 2 teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ c + 1 Tbsp canola oil
  • ¼ c molasses
  • 1 c white sugar
  • 1 egg
  • 3 tablespoon granulated sugar (for topping)

Instructions

  • Preheat your oven to 350F.
  • In a medium bowl mix together flours, baking soda, spices, and salt.
  • In a large bowl, beat together oil, molasses and sugar until well blended. Add egg, and beat until incorporated.
  • Add dry mixture to wet mixture, stirring until just moistened.
  • Shape dough into 1.5" balls. Flatten and space 1" apart on a lined cookie sheet. Sprinkle with granulated sugar.
  • Bake for 10 minutes, or until cookies are puffy and slightly firm around the edges.
  • Remove from the oven and let the cookies cool on the pan for 2 minutes before removing to a wire rack to cool completely.
  • Store in an air-tight container for up to a week.
