Ingredients

unbleached all-purpose flour

whole wheat flour

baking soda

c + 1 Tbsp
canola oil
¼

molasses

white sugar

egg

granulated sugar
(for topping)
Instructions
Preheat your oven to 350F.
In a medium bowl mix together flours, baking soda, spices, and salt.
In a large bowl, beat together oil, molasses and sugar until well blended. Add egg, and beat until incorporated.
Add dry mixture to wet mixture, stirring until just moistened.
Shape dough into 1.5” balls. Flatten and space 1” apart on a lined cookie sheet. Sprinkle with granulated sugar.
Bake for 10 minutes, or until cookies are puffy and slightly firm around the edges.
Remove from the oven and let the cookies cool on the pan for 2 minutes before removing to a wire rack to cool completely.
Store in an air-tight container for up to a week.
