This watermelon gazpacho (sometimes simply called watermelon soup) is a refreshing, lightly sweet, fruity summer twist on a Spanish classic, bursting with herbs and sweet watermelon flavor.
Kindness From A Stranger
As I walked up the steps to the Library the other day, a weather-worn, middle-aged man with a grumpy-looking disposition stubbed out his cigarette in the ash bin next to the door. When he crossed in front of me on his way inside, I smelled a distinct odor.
Then, he stopped at the door and pulled it open for me to pass though, a kind smile moving slightly across his worn face.
I smiled back, thanked him, and continued on my way.
It wasn’t so much the kind gesture from the type of stranger most people would disregard with an annoyed grumble that made me pause, but his comment as I walked away.
“You know,” he said with a slight lisp that sounded as if he regularly had a hard time finding his words, “the other day I opened the door for a lady, and she looked me in the eye and said, ‘My arm’s not broken!'” With a sly grin he continued, “I told her: well, it might be if you keep talking to people like that.” But then he got serious, “I was just being kind. Geez, no one gets kindness anymore.”
No one gets kindness anymore.
That statement lingered in my head as I drove home.
To ‘get’ kindness you have to know how to give it, as well as graciously receive it.
Is it some type of fear and distrust? Selfish blindness? Or the mindset of extreme self sufficiency and independence that keep us from a willingness to receive kindness from a stranger?
Granted, life does call for caution. But, it takes courage to be genuinely kind to a stranger, particularly in today’s society. And, that courage deserves recognition. A smile or ‘thank you’ really can go a long way.
Courageous kindness is a glimmer in a society that seems to be turning more inward. And, without recognition, we risk squelching the last sparks of that courageous kindness.
Our Watermelon Gazpacho Recipe
What does this have to do with Watermelon Gazpacho?
Absolutely nothing.
Well, I could try to tell you about the sunny and sweet disposition of this soup, in an effort to link it to the bright feelings of making someone’s day with kindness. Or, I could talk about the unexpectedly delicious combination of flavors, in relation to the way kindness can come from the most unlikely of places.
But, to be honest, I just hope you enjoy this sweetened twist on the Classic Gazpacho. And maybe show a stranger a small token of kindness today.
Watermelon Gazpacho
Ingredients
- 4 c watermelon, diced
- 1 large tomato, diced
- 1 c cucumber, diced
- 3 limes, juiced (roughly ¼ c + 2 Tbsp juice)
- 1 ½ Tbsp red wine vinegar
- 4 fresh basil, coarse chopped
Instructions
- Combine all ingredients in a blender and blend until smooth.
- Serve garnished with fresh basil.
