We've been really getting into the combo of sweet fruits and herbs this summer, particularly watermelon and basil.
This Watermelon Basil Lemonade started me off loving the sweet and bright herby combo, and I knew I didn't just want to leave it at a beverage.
A Little About Basil
Basil is one cool little herb.
You probably know it most for seasoning in Italian dishes like Caprese Salad and pesto. But this bright herb can be taken away from tomatoes and garlic and still work magic.
And with its high levels of vitamin A and C, iron, and potassium, there's a reason to find any excuse you can to load up.
Our Watermelon Basil Salad Recipe
This is a simple salad base of dark greens and cool cucumber, but the crisp and juicy watermelon give a sweet burst, and the basil leaves hidden among the greens jump in with their punch of flavor.

Watermelon Basil Salad with Honey Balsamic Dressing
Ingredients
For the Balsamic Dressing
- 2 tablespoon balsamic vinegar
- 1 teaspoon honey
For The Watermelon Basil Salad
- 2 c mixed greens
- ¼ c fresh basil, coarsely chopped
- 1 c watermelon, cubed
- ¼ c cucumber, sliced and quartered
Instructions
- In a small bowl mix together vinegar and honey for the dressing, whisking until combined. Set aside.
- Place greens on serving plate. Toss with basil. Top with watermelon and cucumber.
- Add dressing as desired.
