Bacon, turkey, avocado... for breakfast. This recipe for a Turkey Club Omelette is a breakfast that will keep you going throughout the day. And, it's a perfect way to use up leftover holiday turkey!

Ingredients
2slicesbacon
2tablespoononion,diced
3tablespoontomatoes,diced
¼ccooked turkey,diced
5eggs,beaten
¼avocado,diced
½ccheddar cheese,shredded
Instructions
In a medium, non-stick frying pan with high sides, fry bacon over medium heat until crisp. Remove bacon from heat onto a paper towel. Once cooled, break into pieces.
Drain all but 1 teaspoon of fat from the pan.*
Reduce heat to low, sauté onions in the 1 teaspoon of bacon fat until translucent. Add tomatoes and turkey and heat through. Remove mixture from the pan.
Increase heat to medium. Pour beaten eggs into the pan, creating a large round disc of eggs. Cover and cook, checking often.
When the top of the eggs no longer wiggles, reduce heat to low. Sprinkle half of the egg round with ¼ c cheddar cheese. Add bacon pieces, turkey mixture, and diced avocado. Top with the remaining cheese.
Carefully, fold the half of the egg round not covered in toppings over the toppings. Press down gently with a spatula. Cover and cook a minute or two longer to melt the cheese.
Notes
*The best way to dispose of bacon grease is to pour it into a glass jar or ceramic mug and let it cool until it hardens. Then it can easily be pitched.
