Ingredients
For The Dressing
¼cplain low-fat yogurt
1ozblue cheesecrumbled
¼teaspoonsalt
Dashground white pepper
For The Potato Salad
2lbspotatoes,washed and sliced into ¼" rounds
1largered onion,sliced
1teaspoonolive oil
4oz (4 strips)bacon
Instructions
Preheat your oven to 450F.
In a small bowl, mix the yogurt, blue cheese crumbles, salt and pepper. Set the dressing aside.
Toss the sliced potatoes, red onions, and oil together in a large bowl. Place on an aluminum foil-lined baking sheet and roast for 20-30 minutes, stirring every 10 minutes, until the potatoes are soft and golden.
While the potatoes are roasting, place the bacon in a medium frying pan over medium low, and fry until crisp. Remove from the pan to a paper towel and pat dry. When cool, crumble the bacon into small pieces.
In a large serving bowl, toss bacon with the potato mixture. Add the yogurt dressing, and mix until everything is well coated.
