Since our foray into Green Smoothies a few weeks back, we have been on a bit of a smoothie kick.

Green or not-so green, we’ve been throwing all sorts of fruits, veggies and greens into our blender.

That’s right, veggies.

Our Beet Smoothie Recipe

Since the temperatures have been above freezing, we still have some beets that are holding on in our garden.

So, why not?

We decided to create a fiber-rich, root vegetable smoothie. And the results were delicious.

Using Sweet Root Vegetables In A Smoothie

Beets and carrots both tend to have a sweeter flavor, making them perfect candidates for a smoothie. Ginger is a fun ‘extra’ root addition to give a fall warmth to the flavor.

And, we added just a splash of lemon juice to brighten everything up.

The apple we added starts to pump up the moisture content. With all that root fiber, you’ll need it. And, for a liquid we just used water. But, if you have apple juice, it would add a nice extra sweetness to the smoothie.

Sweet Roots Beet Smoothie

Ingredients

  • 2 beets (roughly ½ lb), raw, peeled and chopped
  • 2 carrots (roughly ½ lb), chopped
  • 2 small apples (roughly ½ lb), cored and chopped
  • 1 ½ c water*
  • 2 Tbsp lemon juice
  • ½ tsp ground ginger
  • 1 handful ice

Instructions

  • In a blender combine all ingredients, except ice. Pulse to blend until smooth.
  • Add ice, a few cubes at a time, pulsing after each addition, to create your desired consistency.

Notes

*Pure apple juice can be substituted for a sweeter smoothie.

Beets cooked or raw?

We used raw, peeled and diced beets. (We went a head and updated the recipe. Thanks!) Just make sure to blend all the ingredients well before adding the ice, so you don't get big chunks of vegetable. You could also use cooked (unseasoned) beets if you have some laying around.

When I make beet smoothies I have about 3 beets 1 1/ 2 oranges and about a 1/4 size ginger and about 1/3 cup blood orange juice. I precook the beets and add about 1/4 cub beet juice and 1/2 lemon pealed whole then blend.
