- 1 ½ c water
- 1/3 c dried cranberries
- ½ c quinoa, dry, rinsed
- ¼ c oats
- ¼ tsp almond extract
- 1/3 c almonds, coarse chopped
- In a small saucepan (1 qt) combine water, cranberries, and quinoa. Bring water to a boil. Reduce heat to medium and simmer, covered for 15 minutes, until the quinoa is tender.
- Add oats and simmer 5 min, covered until oats are soft.
- Mix in almond extract.
- Add almonds just before serving.
