Did you ever wonder what “a-wassailing” was?
These guys in Will Vinton’s A Claymation Christmas Celebration did too. Only, they took the meaning to a whole new level.
This old English Christmas carol is actually talking about the act of singing carols door to door wishing good health to the people within.
But, in this house, waffles bring just as much cheer as caroling!
Wassail is also the hot mulled cider commonly drunk as a part of the wassailing experience. It sounds like a great way to stay warm while caroling, particularly if it’s spiked with some brandy!
Since we’re huge claymation fans, we decided to turn the ‘lyrical error’ into a tasty breakfast.
The Christmas Waffles bring together the sweet, fruity, and spicy flavors of wassail punch. And, the brandy syrup adds just enough kick for a holiday morning!
(By the way, these are also quite good topped with a smattering of fresh cranberries. The tartness of the cranberries with the sweetness of the brandy syrup is bright Christmas breakfast perfection!)
- 1 c white flour
- 1 c whole wheat flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp nutmeg
- ½ tsp salt
- ⅛ tsp cloves
- 2 eggs
- ¾ c apple juice or cider
- 2 Tbsp canola oil
- 1 tsp lemon juice
- ¾ c sugar
- ½ c brandy
- 1 tsp vanilla
- Preheat waffle iron according to manufacturer’s instructions.
- In a large bowl, stir together flours, baking powder, baking soda, cinnamon, nutmeg, salt, and cloves.
- In a small bowl, beat eggs. Add apple juice, oil, and lemon juice, and whisk to combine.
- Add wet ingredients to dry mixture and stir until just moistened.
- Fill waffle iron and bake according the manufacturer’s instructions.
- In a small saucepan, combine sugar, brandy, and vanilla. Heat over medium heat, stirring until the sugar is dissolved. Bring to a simmer and cook, stirring constantly for 2 min.
- Remove from heat and serve with warm waffles.
